Recipe: Spicy Shrimp and Rice (Minute Rice recipe)

SPICY SHRIMP AND RICE

1 medium onion, cut into wedges
2 tablespoons butter or margarine
1 pound shrimp, cleaned
2 cans (14 1/2 oz. each) tomatoes
1 (10 oz.) package frozen broccoli florets
1 (1 1/4 oz.) package taco seasoning mix
1 1/2 cups dry Minute Rice

Saute onion in hot butter in skillet until tender but not browned, about 4 minutes.

Add shrimp, tomatoes broccoli and taco seasoning mix. Bring to a boil. Reduce heat; cover and simmer 5 minutes. Bring to a full boil.

Stir in rice. Cover; remove from heat. Let stand 5 minutes. Fluff with fork.

Makes 4 servings
