Recipe: Baked Stuffed Mushrooms (Minute Rice recipe)

1/4 pound Italian or bulk pork sausage
1 cup chopped onions
1 pound large mushrooms (about 12)
3/4 cup water
1 tablespoon finely chopped p
1/2 teaspoon salt (optional)
1/8 teaspoon pepper
3/4 cup dry Minute Rice
3/4 cup mayonnaise
1/2 cup grated Parmesan cheese
Brown sausage with onions in a skillet, breaking up meat with fork.
Meanwhile, remove stems from mushrooms. Chop stems very fine and add to meat mixture; cook until lightly browned.
Add water, parsley, salt and pepper. Bring to a full boil. Stir in rice. Cover; remove from heat. Let stand 5 minutes.
Mix mayonnaise and cheese. Stir 1/2 cup of the mayonnaise mixture into rice mixture. Spoon into mushroom caps. Place in a shallow baking dish. Top with remaining mayonnaise mixture.
Bake at 400 degrees F about 15 minutes, or until browned and puffy.
