Recipe: Spinach, Orzo and Chicken Salad like Macaroni Grill's for Karen

Spinach, Orzo and Chicken Salad like Macaroni Grill's

3 ounces fresh spinach, julienne-shredded
3 ounces grilled chicken, sliced and chilled
2 tablespoons ripe Roma tomatoes, diced
1 tablespoon pine nuts, lightly toasted
1 tablespoon sun-dried tomatoes, julienne cut
1 tablespoon capers
1 tablespoon sliced black olives
1/2 ounce radicchio, julienne-cut
5 ounces orzo pasta, cooked and chilled
3 ounces roasted-garlic lemon vinaigrette
1 1/2 teaspoons grated parmesan cheese
Fresh cracked pepper, for garnish

In the order listed, place all ingredients, except parmesan cheese, in a chilled mixing bowl. Toss. Garnish with shaved parmesan cheese and fresh cracked pepper. Serve.
