BUTTERSTUFFING AND TOMATOES
1/2 cup diagonally sliced celery
1/2 cup green bell pepper strips (1/2x1-inch strips)
1 tbsp instant minced onion
1 tsp dried basil
1/2 to 1 tsp salt
1/4 tsp ground black pepper
1/3 cup butter, melted
1 cup seasoned stuffing mix
4 tomatoes, each cut in 8 wedges
2 tsp sugar
Saute celery, green pepper, onion, basil, salt and pepper in butter until vegetables are crisp-tender.
Stir in stuffing mix. Add tomatoes and sugar; stir gently. Cover and cook over low heat 10-12 minutes.
Makes 4 servings
