This recipe is from a People's Friend magazine. I don't know how old it is but there are a few recipes for using with a 500 Watt microwave, so it isn't ancient!
STOTTIES
12 ozs strong white flour
1 teaspoon salt
1/2 oz Stork margarine
1/2 oz sachet "Easy Blend" yeast
7 fluid ozs milk and water mixed
Sieve the flour and salt together in a bowl. Rub in the Stork and stir in the yeast.
Heat the milk and water in a saucepan until tepid, then add to the bowl and mix to a pliable dough. Turn onto a lightly floured surface and knead for 10 minutes until smooth.
Roll the dough out to an 8-inch round and place on a greased baking tray. Cover with oiled polythene and leave to prove until doubled in size (approximately 1 hour).
Dust the dough with flour, then make an indentation in the centre using a finger.
Bake in a pre-heated oven at 450 deg. F., 230 deg. C., Gas Mark 8, for 8 to 10 minutes or until golden. Remove from the oven , turn dough over and return to the oven for approximately 5 minutes until the dough sounds hollow when tapped.
Split and serve toasted with grated cheese.
