These are a great cheesecake taste but not as rich or sweet. Hope that you enjoy as much as I did.
Strawberry Cheesecake Muffins
Makes 12 muffins
Freezes well
125g cream cheese (I used light), softened
c icing sugar
2 c all purpose flour
1 tbsp baking powder
tsp salt
1 egg
1 c milk
c lightly packed brown sugar
1/3 c margarine, melted
1tsp grated lemon peel
tsp vanilla extract
c strawberry jam (I used raspberry)
Grease large muffin tin. Blend cream cheese and icing sugar until smooth; set aside. Combine flour, baking powder and salt in large bowl and set aside. Mix egg, milk, brown sugar, melted margarine, lemon peel and vanilla extract. Stir liquid ingredients into the dry, stirring just until moistened. Spoon half of the batter into muffin cups. Top with 1 tbsp of cream cheese mixture and 1 tsp jam. Spoon remaining batter on top. Bake at 375 F for 20 minutes or until the tops are golden. Cool in pan for 5 minutes and remove to cooling rack. Store in airtight container.
