STRAWBERRY COBBLER
(Diabetic and Renal Diet Friendly)
1 cup plain, all-purpose flour
2 tsp. baking powder
1 cup Splenda, divided use (or sugar if not making for a diabetic)
3/4 cup water
1 (20 oz.) package frozen unsweetened strawberries
Preheat oven to 400 degrees F. Grease a 9x16x2-inch baking dish.
Combine flour, baking powder and 1/2 cup Splenda in a bowl and add 3/4 cup water. Pour into the prepared baking dish; set aside.
Heat strawberries and the remaining 1/2 cup Splenda in saucepan until it boils. Pour over batter.
Bake until golden brown, about 30 minutes.
Makes 6 servings
