I know this recipe has to be old. It's been a "southern" thing for a long time. My FIL made this since at least the 1970's if not before. And according to my husband, his grandmother and great grandmother also made it. Let's just say that it's been a tradition in their family. They tend to serve it over biscuits.
TOMATO GRAVY
1 pint canned diced tomatoes
3 Tablespoons bacon grease (or cooking oil)*
1 1/2 Tablespoons flour
Salt and pepper, to taste
Put bacon grease and flour in skillet. Brown until light. Add tomatoes with their liquid, salt and pepper. Simmer for 10 minutes. You can add extra water a little at a time if your gravy begins getting too thick.
*I use cooking oil when making this for my husband because I just don't like the thought of feeding my husband pork lard. But, if eaten in moderation I suppose that using the bacon grease would be ok, and I do know that the bacon grease does lend a nice flavor to the gravy.
