Recipe: Strawberry Romaine Salad with Sweet and Sour Dressing

HI, This doesn't contain Dijon mustard in the dressing, but you could always add it. Kim

STRAWBERRY ROMAINE SALAD

FOR THE DRESSING:
1 cup oil
3/4 cup sugar
1/2 cup red wine vinegar
2 cloves garlic, minced
1/2 tsp. salt
1/2 tsp. paprika
1/4 tsp. ground white pepper
FOR THE SALAD:
1 large head romaine lettuce
1 head Boston lettuce
1 pint strawberries, sliced
1 cup Monterey Jack cheese, shredded
1/2 cup chopped walnuts, toasted

Combine first 7 ingredients in a large jar with lid. Cover tightly and shake vigorously. This dressing may be refrigerated for a week.

Tear lettuce into bite-size pieces. Combine lettuce, strawberries, cheese and walnuts in a large salad bowl. Pour dressing over salad and toss gently.

Yield: 12 servings.
