MEDITERRANEAN-STYLE CHICKPEA SALAD
3 tablespoons extra virgin olive oil
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1-2 garlic cloves, minced
1/8 teaspoon cayenne pepper
1/2 teaspoon ground cumin
1/4 cup chopped fresh mint or parsley
Salt and freshly ground black pepper to taste
1 (19-ounce) can chickpeas, drained well, rinsed and drained well again
1 cup crumbed feta cheese
1/2 cup pitted black olives
1/2 medium red onion, finely diced
1/2 medium green pepper, finely diced
Combine the first 8 ingredients in a bowl and mix well to combine. Add the remaining ingredients and toss to combine. Cover and refrigerate the salad until ready to serve.
Gently toss again just before serving.
Serves 6
