For dessert, this is relatively low in fat.

Old-Fashioned Strawberry Shortcake
2 pints strawberries, hulled and sliced
6 tablespoons sugar
2 1/4cups light biscuit baking mix
2/3cup nonfat milk
3tablespoons butter or corn oil margarine, melted
1cup light whipped topping
Combine strawberries and half the sugar; allow to stand at room temperature. Preheat the oven to 450 degrees. Combine baking mix, remaining sugar, milk and butter; stir until a soft dough forms. Pat dough out on a lightly floured board to about 1/2-inch thick. Using a 2 1/2-inch biscuit cutter, cut 8 circles, using all the dough. Arrange biscuits 1 inch apart on ungreased baking sheet. Bake 8 to 10 minutes, or until puffed and golden brown.
Cool biscuits on a wire rack. Just before serving, split biscuits in half and place the bottom halves on serving plates. Cover each one with 1/4 cup strawberries. Place tops over berries and cover them with another 2 tablespoons berries. Top each serving with 2 tablespoons whipped topping.
Makes 8 servings, each: 246 calories; 7 grams fat; 12 milligrams cholesterol; 453 milligrams sodium; 41 grams carbohydrates; 4 grams protein; 3 grams fiber.
