Recipe(tried): Streusel Coffee Cake using Pie Filling (corrected)
Breakfast and BrunchDan, This is one of the best. Recipe is always asked for.
STREUSEL COFFEE CAKE
2 1/4 cups flour
3/4 cup sugar
3/4 cup butter
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 egg
3/4 cup buttermilk or sour milk *
1 can Pie Filling of your choice **
* Buttermilk is 1st choice but sour milk is good too.
** I find Blueberry, Cherry, Lemon and Apple are the best, in that order.
Combine flour and sugar in large bowl. Cut in butter until mixture is crumbly. Set aside 1/2 cup of mixture. To the remainder of the mixture, add baking powder and baking soda.
Combine egg and milk and add to the dry ingredients. Stir just to moisten.
Spread 2/3 of the batter over bottom and part way up the side of a greased 9-inch springform pan. Spoon pie filling over batter. Drop spoonfuls of the remaining batter over the filling. Sprinkle with the reserved crumb mixture.
Bake at 350 degrees F for 50-55 minutes or until top is light golden brown.
Can be served warm or cold but we prefer cold. It never lasts a day!
