Sugar Snap Peas with Papaya Salsa:
1 cup peeled seeded, and diced papaya
1/2 cup chopped fresh cilantro
1 tablespoon minced onion
2 teaspoons lime juice
2 teaspoons rice wine vinegar
1/8 teaspoon salt
1/8 teaspoon ground white pepper
1 pound fresh Sugar Snap peas, trimmed
Combine first 7 ingredients in a bowl, toss gently, and set aside.
Arrange peas in a steamer basket over boiling water. Cover and steam 3 minutes or until peas are crisp-tender; drain well.
Transfer peas to a serving bowl, top with papaya mixture. Serve immediately.
Yield: 4 (1-cup) servings.
