Recipe: Sugared Bacon

The tantalizing aroma of bacon, brown sugar and cinnamon is irresistible. These morsels are fine for either a buffet brunch or a cocktail party.
1 pound bacon, room temperature (regular
bacon, not thick sliced)
1 1/4 cups brown sugar
1 Tbsp cinnamon, optional
Preheat oven to 350 degrees F.
Cut each slice of bacon in half, crosswise.
Mix sugar and cinnamon together and thoroughly coat each slice of bacon. Twist slices (or leave flat) and place on rack in a broiler pan or jelly roll pan.
Bake at 350 degrees F until crisp and sugar is bubbly, 15-20 minutes. Watch closely as the sugar burns quickly. Cool on foil.
Serve at room temperature. These may be made hours ahead and left at room temperature.
Note from source: This is a really good recipe - I have made it several times and finally cured (just a little bacon joke) the problem of the bacon uncurling after I twisted it up. I used shish kabob skewers (you can use long bamboo skewers, soaked in water) and threaded the tops and bottoms on them- so that I had about 8 bacon twists on each set- one skewer on top and one on the bottom. Try it!
