Recipe(tried): SUNDAY DINNER AT OUR HOUSE
MenusToday for lunch we had: Turkey Pot Pie--Alabama style, zipper cream peas, Debbie's Deviled Eggs, macaroni salad, CLAUSSEN Pickles, fried apples, JELLO, sweet tea with lemon, brownies, and cream cheese pound cake. YUMMY!
CROCKPOT TURKEY BREAST
2 onions, sliced thinly
3-4 stalks celery, chopped
10-12 small baby carrots
2 T. garlic, chopped
1 4-6 pound turkey breast, partially thawed
PAM cooking spray
1 T. rosemary
1 can seasoned chicken broth
1/2 cup white wine
poultry seasoning, seasoned salt, and pepper
Spray the LARGE Crockpot with PAM. Place the onions, celery, carrots, and garlic on the bottom of the Crockpot. Put the turkey breast halves on top of the veggies. Combine the wine, chicken broth, and rosemary and pour over the turkey breast. Sprinkle poultry seasoning, seasoned salt, and pepper on the top. Cover and cook on LOW 4 1/2-5 hours or until turkey is tender. Remove the turkey from the Crockpot, strain the veggies keeping the turkey broth, and put the broth in quart jars. Discard the veggies. Put the turkey breast into the refrigerator until it has cooled and is easy to handle. (The turkey is easier to handle if it's been cooked and cooled the day before it's going to be used.) Remove the turkey from the bones and discard the bones. Place the turkey in a plastic zipper bag until ready to use.
TURKEY POT PIE--ALABAMA STYLE
3-4 cups chopped turkey
1 large can cream of chicken soup--98% fat-free
2 cups turkey broth
4 boiled eggs, sliced
1 (4 oz.) can mushrooms, drained
1 can LeSeuer Peas, drained
1 can whole kernel corn, drained
1 red bell pepper, roasted and chopped
poultry seasoning, black pepper, seasoned salt
Crust:
1 1/2 cups self-rising flour
1 1/2 cups milk
1 1/2 sticks margarine, melted
1/2 tsp. poultry seasoning
Spray a 9X13" pan with PAM. Combine the turkey, soup, broth, eggs, mushrooms, peas, corn, and red bell pepper. Sprinkle this mixture with poultry seasoning, black pepper, and seasoned salt. Pour this mixture into the prepared pan. Prepare the crust mixture and pour over the chicken mixture. The pie will make its own crust as it cooks! Bake for 1 hour and 20 minutes, or until crust is golden brown, at 350 degrees.
NOTE*****The filling for this pie can be doubled and frozen. Chicken breasts may be used instead of turkey breast. Any kind of veggies that your family prefers would work well in this recipe.
DEBBIE'S DEVILED EGGS
12 eggs, hardboiled, peeled, and sliced in halves
yolks from 3-4 eggs (discard the rest)
1 stalk celery, finely chopped
1/2 red onion, finely chopped
1 red bell pepper, roasted and finely chopped
1 8 oz. pkg. 1/3 less-fat cream cheese
2 T. low-fat milk
1/2 tsp. yellow food coloring
Place 3-4 yolks in a bowl and mash. Place veggies, cream cheese, food coloring, and milk into the bowl and stir until the ingredients are combined well. Put a heaping tablespoon of this mixture on each egg half. Refrigerate until ready to serve.
CREAM CHEESE POUND CAKE
1 cup margarine
1/2 cup buter
1 (8 oz.) pkg. cream cheese
3 cups sugar
2 tsps. vanilla extract
6 large eggs
3 cups cake flour
dash of salt
Combine softened margarine, butter, cream cheese, and sugar; beat well. Add salt and vanilla extract. Add eggs one at a time, beating well after each addition. Add flour and mix well. Pour batter into a greased and floured 10-inch tube pan. Place pan in a cold oven and set at 275 degrees. Bake 1 1/2 hours.
This recipe was given to me by our home economics teacher at school. This cake is absolutely delicious!
