Recipe(tried): Porcupine Meatballs (using ground beef and rice)

PORCUPINE MEATBALLS

1/2 cup uncooked long-grain rice
1 1/2 cups water, divided use
1/3 cup chopped onion
1 teaspoon salt
1/2 teaspoon celery salt
1/8 teaspoon ground black pepper
1/8 teaspoon garlic powder
1 lb ground beef
2 tablespoons cooking oil
1 (15 oz) can tomato sauce
2 tablespoons brown sugar
2 teaspoons Worcestershire sauce

In a bowl, combine rice, 1/2 cup water, onion, salt, celery salt, pepper and garlic powder. Add beef and mix well. Shape into 1 1/2-inch balls.

In a large skillet, brown meatballs in oil; drain.

Combine tomato sauce, remaining 1 cup water, brown sugar and Worcestershire sauce; pour over meatballs in skillet. Reduce heat; cover and simmer for 1 hour.

Makes 4-6 servings
