SUPER SALMON
This came from the newspaper.
Buy frozen salmon (recommendation: Norwegian salmon from Costco).
Let thaw and coat lightly with olive oil.
Sprinkle on both sides with:Jamaican jerk spices (buy at the supermarket)
a little cinnamon
freshly ground pepper
garlic salt
Put a layer of foil sprayed lightly with Pam on the grill (this keeps the fish from sticking to the grill) then heat the grill until really hot.
Put the salmon on the foil and sear on both sides until it blackens.
Lower heat and let the fish cook until thoroughly done but not dry.
Serve with a side dish of angel-hair pasta topped with yellow peppers, mushrooms and garlic sauteed in olive oil. Add some basil and fresh Parmesan, too.
