BILL'S CAMPFIRE HALIBUT
This recipe uses one of the world's most abundant food sources: Taco Bell hot sauce.
What you do, see, is, on your way to the Rim or wherever you're camping, you stop and pick up a nice halibut steak, and you stop at Tco Bell and get some packets of their hot, hot sauce.
Then you marinate the fish in:
2 parts Taco Bell hot, hot sauce (you can substitute Arby's horsey sauce)
1 part ketchup
the juice of 1 lemon
1 part tequila (just any call brand will do, like Loma Viejo, which, as you know, means 'old dirt' in Spanish).
Anyway, while you're marinating that, you build a fire, and when it's going good, you toss in a couple of foil-wrapped potatoes. Half and hour later, you put the fish on the grill, taking care not to let the marinade drip on the flame. Cook 4-6 minutes per side
To get really-fancy, you can also boil a can of peas. This is good with a nice Chardonnay. And relish.
