ASIAN RIBS
1/3 cup soy sauce
2 tablespoons dry sherry
2 tablespoons hoisin sauce
1 tablespoon vegetable oil
1 teaspoon five-spice powder
1 clove garlic
1/4 teaspoon pepper
3 pounds meaty pork spareribs or loin back ribs
For marinade, combine soy sauce, sherry, hoisin sauce, vegetable oil, five-spice powder, garlic, and pepper. Place ribs in plastic bag set into a shallow dish. Pour marinade over ribs; close bag.
Marinate in the refrigerator 4 hours or overnight, turning bag occasionally to distribute marinade.
Remove ribs from marinade. (Pour marinade into a saucepan and boil for a few minutes before using for basting.)
Place ribs in center of cooking grate. Grill 1 to 1 1/2 hours or until tender, brushing with reserved marinade during the last 20 minutes of grilling time.
To serve, cut ribs into 2- or 3-rib portions.
