CHILI'S SALSA
1 (14.5 oz can) can tomatoes and green chiles
1 (14.5 oz.) can whole peeled tomatoes, plus juice
1 tbsp plus 1 tsp jalapenos (canned, diced, not pickled)
1/4 cup yellow onion, diced
1/2 to 3/4 tsp garlic salt
1/2 tsp. cumin
1/4 tsp. sugar
In food processor place jalapenos and onions. Process for just a few seconds. Add both cans of tomatoes, garlic salt, cumin, and sugar. Process all ingredients until well blended but do not puree. Place in covered container and chill. A couple of hours of chilling will help blend and enrich the flavor.
Serve with your favorite thin corn tortilla chips.
NOTE: If you have fresh tomatoes from your garden, they are great to use in place of canned tomatoes. Also, depending on how spicy you like your salsa, mild, medium, etc. used your judgment as to how much jalapeno you use. This recipe was on copykat when we downloaded it back in 2002.
