SWEET AND SOUR TOFU
1 block extra-firm tofu, water pressed out
Sweet and Sour Sauce (recipe follows)
1 tablespoon coconut oil (or hot sesame oil)
FOR SERVING:
Brown rice, cooked
Mixed vegetables, cooked
Sriracha (optional)
Cut tofu in small squares (about 20). Cook well in a nonstick pan until tofu is browned.
Pour Sweet and Sour Sauce over tofu, and let simmer for 10 minutes.
Serve over brown rice and veggies, with extra sriracha if you want more heat.
FOR THE SWEET AND SOUR SAUCE
2 tablespoons honey
1 tablespoon Braggs liquid aminos (or low-sodium soy sauce)
1 tablespoon Sriracha
1 tablespoon lemon juice
1 tablespoon apple cider vinegar
4 cloves garlic
1 teaspoon grated ginger
Mix ingredients for sauce together thoroughly and set aside.
Makes 4 servings
