Kris: Here are two different ways. The second does not call for the marshmallows inside, but they would be easy to add.
Sweet Potato Balls
1-1/3 cups cooked sweet potatoes, mashed
8 large marshmallows
1/2 cup cornflakes, finely crushed
1/3 cup brown sugar, packed
1 Tbs. plus 1 tsp. skim milk
1 Tbs. plus 1 tsp. unsalted butter
Preheat oven to 400 F. Mold a spoonful of the sweet potatoes around each marshmallow and roll in cornflake crumbs. Place
in a shallow baking dish. Combine brown sugar, milk and butter in a heavy saucepan. Bring to a boil and pour over the balls.
Bake , uncovered, 15 minutes.
SWEET POTATO BALLS
Yield: 6 servings
16 ounce can sweet potatoes or yams
8 ounces crushed pineapple
1 cup corn flakes
Cinnamon-sugar, optional
OVEN: 350 degrees F
Drain potatoes or yams and mash with a fork.
Drain pineapple well and add to potatoes.
Put corn flakes in plastic bag, press out air, crush with a rolling pin.
Put crumbs in a bowl. Stir in cinnamon-sugar mixture to taste. (optional)
Roll potato mixture into balls the size of walnuts.
Roll balls in corn flake crumbs and place on foil- lined baking sheet.
Bake at 350 degrees F for 15-20 minutes.
