Recipe: Sweet Potato Pancakes

Sweet Potato Pancakes

Servings: 4

2 1/2 pounds sweet potatoes -- peeled
1 1/2 teaspoons salt
1/2 teaspoon white pepper
5 eggs -- lightly beaten

Grate sweet potatoes using the medium shredding blade of the food processor. Transfer to a mixing bowl, season with salt and white pepper and mix in eggs. Cover and refrigerate for up to 4 hours.

In a large non-stick skillet heat enough oil to just cover the bottom. Pour potato mixture into skillet, 1/4 cup at a time, flattening with the back of a wooden spoon. Cook until crisp and golden on both sides, about 3 minutes per side. Drain on paper towel. Keep warm in a 100 degree oven.
