Recipe: Sweet Potato Pone

Sweet Potato Pone
Serves 8

1/4 lb.butter
2 c. pecan pieces
4 medium sweet potatoes
2 c. brown sugar
1 c. coconut cream
2 c. orange juice
2 c. heavy cream
1 c. toasted coconut

Preheat oven to 350 degrees F.

Melt the butter in a heavy skillet & add the pecans, toast lightly.

Peel & grate raw sweet potatoes & toss in a 3 quart bowl with the pecans,sugar,coconut cream,orange juice & the heavy cream.

Put in a buttered 3 quart casserole & bake for 1 1/2 hours. Sprinkle with toasted coconut,cut in 8 wedges & serve warm with heavy cream on the side.
