Recipe(tried): Sweet Potato Soup

The day after your "orange" swap, I found this and tried it. It is a thick, but not a cream-based soup. Not only does it taste good, but is very good for you - low fat, high in vitamins A and C.This version serves 6.

Sweet Potato Soup

A.
2 tsp. butter or margarine
1 1/4 C. chopped onion
1 clove minced garlic
B.
2 cans (14 oz.ea) chicken broth)
1 lb. fresh sweet potatoes( I used red-orange)
1 3/4 C. sliced carrots
2 tsp. chopped rosemary leaves
C.
1/2 C. orange juice
1/2 tsp. salt
pepper to taste

Saute "A" ingredients until soft.
Add "B" ingredients. Bring to boils, reduce heat , cover, and simmer for about 30 min.

Reserving liquid, transfer sweet potato mixture to food processor and process until smooth.

Return to liquid in pan, add "C" ingredients, heat on "Low" about 10 minutes. Enjoy.
