I'm back (but just barely). Here is a recipe for swordfish steaks that I make quite often. I hope that you try it on the outdoor grill and that you and your husband enjoy it. These directions are for preparing in an oven broiler, but you can simply remove them from the marinade and throw them on the grill.
SWORDFISH STEAKS
4 swordfish steaks, about 1 inch thick
1/2 cup soy sauce
1/2 cup olive oil
1/2 cup dry sherry
2 garlic cloves, finely chopped
2 tablespoons finely chopped fresh ginger
2 tablespoons grated orange rind
Chopped scallions, cherry tomatoes and lime wedges for garnish
Place the fish in a shallow dish. Combine remaining ingredients except garnishes and puor over the fish. Leave to marinate for about an hour, turning the fish and basting occasionally.
Remove fish to an oiled rack in a broiler pan. Reserve marinade. Broil about 4 inches from heat for about 6 minutes, then turn fish over and broil about 4 minutes more. Transfer to a heated serving platter.
Heat remaining marinade and let boil for several minutes to destroy any bacteria.
Serve marinade in a sauceboat. Garnish with scallions, cherry tomatoes and lime wedges.
