I found this, but don't know if it is Uncle Dan's mom or not? The recipe looks really good so I thought I would share it with you...Hope it helps!
Taco Salad
1 lb ground beef
1/2~1 small onion, chopped
1 pkg dry Old El Paso seasining mix
water
lettuce
1 (3.8 oz) can black olives; drained
1 (8 oz) package shredded cheddar or other cheese
1~2 ripe tomatoes; deiced
taco flavored doritos
1 can black or red kidney beans, drained (optional)
1 jar taco sauce
garlic bread
Brown ground beef and onion..Drain off the fat. Add 1 packet of seasonion and the 3/4 cup of water as called for on the packet recipe.
Dissove the sasoning mix and let simmer until the sauce is a little thicker, but not dry..
Turn off the heat or set aside while you do the rest.
Wash, dry and break up enough lettuce to serve 3-4 people. Add~sliced black olives, shredded cheese, tomatoes, and some taco flacored doritos broken into pieces. If you want as an option, you can also add a can of beans (drained).
When you are ready to serve the salad, reheat the meat mixture and then add it warm to the salad and toss..If the salad is still too dry, add a couple T of taco sauce from a jor...Serve with the jar taco sauce and some garlic bread.
