Recipe(tried): Tale of an awful lunch & a good recipe.. Chicken Courgette

Last night i could not be bothered to pack lunch for work today so for a treat, as it's Friday i decided to buy lunch from outside. I bought fresh made split pea and ham soup as i haven't got round to making it as home yet and fancied it. It is supposed to be comforting with a lovely smokey flavour but it's so bland it doesn't taste of anything :( Am rather disappointed to say the least. Anyway here is a recipe i made up when i was in France and we were trying to use up the last of stuff in the fridge. Also i didn't have access to my usual assortment of spices so i just had to use what was on hand. I have to say though, it was rather good. Haven't given it a title as heaven knows what it is (definately NOT curry) Any suggestions?
Chicken Courgette
4 chicken legs/breasts
2 tins tomatoes
2 medium onion
2 courgettes (is it zucchini?)
1 red bell pepper
1 knorr stock cube (herb de Provence)
1/2 tsp fresh ground pepper which also has coriander seeds in it ( you can buy these already mixed or just add some to your pepper mill)
3 tsp curry powder
2 Schwartz chicken seasoning
2 tbsp tomato puree
1 cup (mug) of water
3 garlic cloves
Salt to taste
Chop chicken (if using breast) and garlic, add to a bowl with 2 tsps curry powder, chicken seasoning, pepper, salt, stock cube and water. Leave to marinade 4 hrs. Fry the onion gently for 5 mins,add the remaining 1 tsp curry powder then add the chicken, reserving the marinade. Seal the chicken on both sides then add the tomatoes, tomato puree, and marinade. Simmer gently until meat is tender. Add the remaining veg - courgettes and red pepper and simmer until just done. When done you can add a dolop of creme fraiche stiring through, if liked. Can serve with mashed potatoes, rice, pasta etc.
