SOUR CREAM PUMPKIN COFFEE CAKE

Streusel:
1/2 cup light brown sugar
1 tsp cinnamon
1/4 tsp allspice
2 tsp margarine or butter

In a small bowl combine the brown sugar, cinnamon and
allspice. Cut in margarine until mixture is crumbly.

Batter:
3 cups flour
2 tsp baking soda
1 Tbs cinnamon
1 tsp salt
1 cup margarine or butter softened
2 cups sugar
4 eggs or egg substitute
1 cup pumpkin
1 cup sour cream
2 tsp vanilla

Combine flour, baking soda, cinnamon and salt. In large
mixer bowl, cream margarine and sugar until light and
fluffy. Beat in eggs one at a time. Add pumpkin , sour
cream and vanilla and mix well. Add dry ingredients. Beat
until well blended.

Grease a 12 cup fluted tube pan (9 inch). Spoon in half of
the batter. Sprinkle streusel over batter not allowing it
to touch the sides of the pan. Top with remaining batter.
Seal to edges. Bake in preheated 350 degree oven for 55 to
60 minutes or until wooden toothpick comes out clean. Cool
30 minutes in pan. Invert onto wire rack to cool.

(10:27:46 am) : Beef brunch

1 1/2 lb Ground beef
1 Onion;large;finely chopped
2 tb Olive oil or butter
2 Garlic;cloves;minced
1 cn Mushrooms;sliced;drained;4oz
2 ts Salt
1/2 ts Nutmeg
1/2 ts Oregano;leaf
1/2 pk Spinach;chopped;frozen*
3 tb Flour
6 Eggs;beaten
1/4 c Milk;scalded
1/2 c Cheddar cheese;sharp;grated

*thawed;drained
In skillet, lightly brown ground beef and onion in olive oil; drain
well. Place in well-greased crock-pot. Stir in remaining ingredients
except eggs, milk and cheese until well blended. Beat eggs and milk
together. Pour over other ingredients; stir well. Dust with additional
nutmeg. Cover and cook on LOW setting for 7 to 10 hours or until firm.
Just before serving, sprinkle with grated cheese. 6 to 8 servings (About
2-1/2 quarts)

3 cups Bisquick
2 cups sharp cheddar cheese, shredded
1 lb ground sausage

Mix together. Make balls, and bake at 350 for 30 minutes. Can be frozen.

Baked Grits with Cheese and Garlic

Recipe from: Becky Grigsby formerly from Harlan County, Ky.

1 cup quick cooking grits
2 cups sharp, grated cheddar cheese
1 heaping tsp minced garlic
4 Tbsp butter, melted
1/2 cup chopped green onions, including green parts
2 eggs slightly beaten
3/4 cups milk

1.Cook the grits according to the package directions.
2.Stir in the cheese, garlic, butter and chopped onions.
3.Pour the mixture into a buttered 2 quart casserole dish and allow to cool
(I never do)
4.Preheat oven to 375 degrees.
5.Mix the eggs and milk and pour over the grits (I mix everything together)
6.Bake one hour.

Makes 6 servings.

Breakfast Tortilla Torta

Recipe By : Family Circle
Serving Size : 8 Preparation

1 Tablespoon olive oil
1 pound new potatoes -- thinly sliced
2 bunches green onions -- sliced
1 teaspoon chili powder
1/2 teaspoon salt
3 large eggs
3 large egg whites
1 cup frozen corn -- thawed
1/8 teaspoon black pepper
1 pound turkey sausage
1 large sweet red peppers -- seeded,chopped
1/2 cup salsa, bottled
5 large flour tortillas
1 cup cheddar cheese, lowfat -- shredded
sour cream, light (optional)

Preheat oven to 400 degrees F. Coat 10-inch springform pan with nonstick
vegetable-oil cooking spray.

Heat the oil in nonstick skillet over medium heat. Add the potatoes; cook,
covered,stirring occasionally, for12 minutes or until tender. Add 1/3 cup of
the green onion,chili powder and 1/4 teaspoon salt; cook 2 minutes. Scrape
into a bowl.

Coat skillet with nonstick cooking spray. Beat eggs, egg whites, corn, black
pepper and the remaining 1/4 teaspoon salt, in a bowl. Add to skillet; cook
over medium heat for 2 to 3 minutes or just until set, stirring constantly.
Scrape into a clean bowl. Wipe out skillet with papper toweling. Coat
skillet with nonstick cooking spray.

Remove casings from sausage. Add sausage along with sweet pepper and
remaining green onion to skillet; cook until sausage is no longer pink,
breaking up sausage meat with spoon. Drain well. Stir in 1/4 cup of the
salsa.

Assemble torta: Place a tortilla in the bottom of prepared springform pan.
Spoon on the potatoes, spreading evenly. Top with tortilla, pressing flat.
Spoon on half of the sausage mixture, spreading evenly. Top with tortilla,
egg mixture, tortilla, remaining sausage mixture and tortilla. Spoon on the
remaining salsa. Sprinkle with the cheddar cheese.

Bake for 40 minutes or until egg mixture is set, tenting loosely with
aluminum foil during last 20 minutes.. Let stand 10 minutes before serving.
Remove sides of pan. Slice into eighths.

Serving Ideas : Serve with light sour cream.

NOTES : I fixed this for dinner rather than breakfast,and it makes a great
dinner meal.

Hi! Here's a Bran and apple muffin recipe...

1 cup "All Bran"- 1/4 cup milk- 1 cup baked apples- 1/3 cup vegetable oil-
1 egg- 1 1/2 cup flour- 3 1/2 tea sp. baking powder- 1/2 tea sp. salt-
1 tea sp. cinnamon- 1/3 cup brown sugar.

Mix bran, milk, apples, oil and egg. Mix in another bowl the dry
ingredients.
Add the wet ingredients to the dry ones; mix gently just enough to
humidify. Bake 375F, 15-20 min. (You can add dry raisins and/or nuts to
the recipe if you like it!).

Banana Chocolate Muffins

1-3/4 cups plus 2 tablespoons flour
1/3 cup sugar
2 tablespoons unsweetened cocoa powder
1 tablespoon baking powder
1 cup mashed bananas
2/3 cup milk
1/3 cup vegetable oil
1 egg, beaten to blend
1 cup semisweet chocolate chips

Preheat oven to 425F. Line 12-cup muffin tin with paper liners. Combine
flour, sugar, cocoa powder, and baking powder in a large bowl. Blend in
banana, milk, oil and egg until just moistened. Mix in chocolate chips.
Spoon batter into prepared tin. Bake until tester inserted in center comes
out clean, about 20 minutes.

1/2 cup butter
1 1/4 cups sugar
2 eggs
2 cups flour
2 tsp baking powder
1/2 tsp salt
2 1/2 cups blueberries
1/2 cup milk
sugar for topping

Cream butter & sugar; add eggs and mix well. Sift dry ingredients and add
to creamed mixture alternately with milk. Fold in blueberries. Pour into
paper-lined muffin pan, dividing whole batter among 12 cups, and sprinkle
with sugar. Bake at 375 degrees for 20-25 minutes--sometimes takes a
bit longer if batter is rel cold from using frozen berries (don't need
to defrost them). Cool in pan.

TOMATO FRITTERS

FROM THE KITCHEN OF CATHY CARROLL:

4 cups fresh tomatoes - chopped
2 eggs
salt
pepper
flour
vegetable oil for frying

Peel and chop very ripe tomatoes into thumbnail size pieces. Add salt and
pepper to taste. Add eggs and mix well. Add flour 1/2 cup at a time,
mixing well after each addition until you have a thick batter. Batter
should pour from a spoon, but be thicker than pancake batter. Heat 1/2
inch vegetable oil in skillet over medium-high heat. Spoon batter into
patties and fry until golden brown on each side. Remove from pan and drain
on paper towel.

6 Nestle Candy Bars
1 9in graham pie crust
1 extra creamy cool whip

Melt candy, add cool whip. Stir & pour into pie crust and chill.
