Recipe(tried): Three Filling Sandwich Loaf
Sandwiches Judy,
I've made the following Three Filling Sandwich Loaf for showers and they look very nice and were quite tasty.
Three Filling Sandwich Loaf
Bacon & Egg Filling
4 hard-cooked eggs, coarsely chopped
6 slices bacon, cooked & crumbled
1/4 C. mayonnaise
1 tbsp. chopped fresh parsley
1/4 tsp. salt
1/8 tsp. ground white pepper
Cheese Filling
4 ozs. cream cheese, softened
1 C. (4 ozs.) shredded mild Cheddar cheese
1 C. (4 ozs. shredded sharp Cheddar cheese
1/4 C. mayonnaise
1 tbsp. chopped sweet red pepper
1 tsp. Worcestershire sauce
1/8 tsp. garlic powder
Green Olive Filling
2 jars (3 ozs. ea.) whole stuffed green olives, drained
3/4 C. slivered almonds
1/2 C. chopped celery
1/4 C. mayonnaise
2 tsp. minced onion
For the "icing"
2 loaves (16 oz. ea.) unsliced white bread
3 pkgs. (8 ozs. ea.) cream cheese
3 tbsp. prepared rance-style salad dressing
2 tbsp. butter or margarine, softened
1 1/4 tsp. prepared mustard
For the bacon & egg filling, pulse process in gredients until well blended. Spoon into a small bowl & set aside.
For cheese filling, put all ingredients in food processor bowl and process until well blended. Spoon into small bowl & set aside.
For green olive filling, process ingredients until finely chopped. Spoon into small bowl.
Trim crust from bread so each side is flat. Slice each loaf horizontally into 4 equal layers. Place on serving plate. For each sandwich loaf, spread half of each filling between layers of bread; top loaf with remaining slice of bread.
In medium bowl, beat 20 ozs. cream cheese until fluffy. Add salad dressing; beat until smooth. Spread mixture over bread. In small bowl, beat remaining 4 ozs. cream cheese, butter and mustard until smooth. Spoon mixture into a pastry bag fitted with a small round tip. Pipe dots onto sides & ends of loaves. With a medium ribbon tip, pipe bow & ribbon streamers onto loaves. With a medium star tip, pipe shell border around bottom of loaves. Place loaves in airtight container & chill at least 2 hrs. To serve, cut into 3/4" slices. YIELD: 2 sandwich loaves; 10 servings each.
