Tiny Raisin Apple Loaves
1/3 cup butter or margarine, softened
2/3up sugar
2 eggs
3 tbsp milk
1 tsp lemon juice
2 cups flour
1 tsp baking powder
1 tsp salt
1/2 tsp soda
1 1/2 cups peeled grated apple
1 cup chopped raisins
1/2 cup chopped nuts
Cream together butter, sugar and eggs until light and fluffy. Beat in milk and lemon juice.
Sift together dry ingredients; stir into creamed mixture just until moistened. Stir in apple, raisins and nuts. Spoon batter into 3 greased 6X3-inch loaf pans.
Bake at 350 degrees 40 to 45 minutes or until toothpick inserted in center comes out clean.
Makes 3 mini-loaves
Note: Batter may be baked in 1 (9x5-inch) loaf pan. Increase baking time to 1 hour.
