Chelsea's Apple Pie
Second Place Winner - 2000 Connecticut Final Two-Crust Apple Pie Contest - ChelseaWoolfenden, Willington, CT
CRUST:
Pastry for 9 inch two crust pie:
2 cups white pastry flour
1 tsp salt
Generous 2/3 cup Crisco vegetable shortening
5 tbsp cold water
1 tbsp sugar
FILLING:
3/4 cup sugar
1/2 cup all purpose flour
1/4 tsp nutmeg
1/2 tsp cinnamon
dash salt
6 cups thinly sliced pared tart apples
Mix flour, salt and sugar in bowl. Cut in shortening thoroughly. Sprinkle in water, 1 tablespoon at a time, mixing until all flour is moistened and dough almost cleans side of bowl. Roll out on floured pastry cloth with floured stockinet-covered rolling pin.
Bake 45 minutes at 400 degrees.
