Recipe: Toffee Cookies (using dark corn syrup)

This recipe is from the booklet, Fabulous Foods, put out by the Washington Gas Light Company.

Toffee Cookies

1/3 cup melted butter
2 cups rolled oats
1/2 cup brown sugar, sieved and packed (3 ounces)
1/4 cup dark corn syrup
1/2 teaspoon salt
1 1/2 teaspoons vanilla
1 package (6 ounces) semi-sweet chocolate bits, melted
1/4 cup chopped nuts

Preheat oven to 400 degrees F.

Pour melted butter on rolled oats and mix well; add sugar, syrup, salt and vanilla; Mix together. Spread mixture in a greased 8-inch square pan.

Bake about 15 minutes. Cool. Loosen edges and remove to wire cooling rack.

Spread with chocolate and sprinkle with nuts. chill thoroughly.

Cut into squares.

Yield: 3 dozen.
