TOFFEE-FUDGE CRUNCH BARS
1 cup unsalted butter, softened
1/2 cup packed dark brown sugar
1 tsp. vanilla
2 cups unbleached all-purpose flour
1/3 cup cornstarch
1/4 cup imported unsweetened cocoa powder
1/2 tsp. salt
2 cups bits of crushed chocolate-coated toffee candy bars, divided use
Preheat the oven to 350 degrees F. Lightly butter a 13x9-inch baking pan.
In a large bowl, cream the butter and brown sugar with an electric mixer. Stir in the vanilla until blended; set aside.
Sift together the flour, cornstarch, cocoa and salt. Stir the sifted ingredients into the butter mixture until blended. Add 1 cup of the crushed toffee bars; stir until blended. Spread the batter into an even layer in the prepared pan. Sprinkle the remaining 1 cup crushed toffee bars on top and press in lightly with the back of a spoon.
Bake for 25 minutes or until the edges begin to pull away from the sides of the pan. Cool on a wire rack before cutting into bars.
Makes 24 bars
