This was the only recipe from Boulevard Bread Co. I could find on the Internet. Sorry its not the one you were looking for.
Tomato and Bread Salad with Cucumber, Feta, Olives, and Fresh Basil
2 shallots or one small red onion, halved, sliced thinly as possible
1 tbsp red wine vinegar
2 tbsp balsamic vinegar
4 tbsp extra virgin olive oil
1 loaf sourdough bread, cubed
3 ripe tomatoes, heirloom and cherry tomatoes if possible
1 medium cucumber, peeled, seeded and sliced
1/2 pound feta cheese, cubed
1 cup pitted Kalamata olives
10 leaves fresh basil, thinly sliced
salt and pepper to taste
Pour the red wine vinegar over the shallots and let them sit for 15 minutes.
Drizzle olive oil over the bread cubes and toast until golden brown in a 350-degree oven.
Slice tomatoes into bite size cubes or segments. Add the balsamic, salt, pepper and oil to the shallots and vinegar to make the dressing.
Gently toss the tomatoes, 2 cups of croutons, cucumber, olives, feta, dressing, basil and more salt and pepper to taste if necessary.
Portion onto a plate and garnish with more basil.
Servings: 4-6
