Recipe(tried): Tomato & Cuke Sandwiches

Patty, we've had very favorable response to tomato and basil sandwiches as well as the cucumber sandwiches that we have served at our Ladies Tea at church for the past several years. One of the secrets is to lightly butter both sides of the thinly sliced bread. It helps to keep the moisture from soaking into it.

Tomato Basil Sandwiches

Veri-Thin sliced bread
Softened butter or margarine
thinly sliced tomatoes
fresh basil leaves

Butter both sides of the bread; place a layer of tomato and top it with a layer of basil. Place the other piece of bread on top. Trim crusts and cut into desired shapes.Cucumber Sandwiches

I like to peel the cucumbers and then cut them in half longways and run a spoon down the center to remove the seeds. Then thinly slice them and lay them on a double layer of paper towels to remove excess moisture.

To an 8 oz. pkg. of cream cheese, add 1 tsp. dill seasoning. Stir it until softened and fluffy.

Lightly butter both sides of Veri-thin sliced bread, then spread a thin layer of cream cheese on one side. Top with cucumber slices and remaining slice of bread.

Trim crusts and cut in desired shapes.

(These can also be done open face. To garnish them, attach a tiny sprig of fresh dill to the top of the cucumber slice with a small dab of cream cheese. They look very attractive that way too.
