Recipe: Tommy's Oatmeal Cookies and Golden Oatmeal Cookies (using cream cheese)
Desserts - Cookies, Brownies, BarsI found two recipes for you, but I have not tried them. Someday I think I will, though. Oatmeal cookies are my favorite, and I love the flavor of cream cheese as well.
TOMMY'S OATMEAL COOKIES
1/2 cup (1 stick) butter
3/4 cup light cream cheese (neufchatel)
3/4 cup. packed brown sugar
1/2 cup sugar
1 egg
1 tsp. vanilla
1 1/2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/2 tsp. salt (optional)
2 1/2 cups oatmeal
1/2 cup dried currants or raisins
Heat oven to 375 degrees. Beat butter, cream cheese and sugars together until fluffy. Beat in egg and vanilla. Add combined flour, baking soda, salt and spices. Mix well. Stir in oats and currants. Drop by rounded teaspoonfuls onto ungreased cookie sheet. Bake about 10 minutes until golden brown. Makes 3-4 dozen cookies.
GOLDEN OATMEAL COOKIES
3/4 cup butter flavor shortening
1 cup brown sugar
1 cup granulated sugar
1 cup cream cheese, softened
1 tbsp. maple flavoring
2 eggs
2 cups flour
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
2 cups oatmeal
1 cup chopped walnuts
1 cup vanilla chips
Cream together shortening, sugar, brown sugar and cream cheese. Add eggs and maple flavoring. Sift together dry ingredients; mix well. Stir in oatmeal, nuts, and chips. Bake on greased cookie sheet at 350 degrees for 15-17 minutes. Makes 4 dozen.
