Recipe(tried): Tonight's Dinner At My House - Vidalia Onion Casserole

I make my menus a week ahead, so I know what I will have tonight. I would like to share my vidalia onion casserole with my new friends. Vidalias are beginning to show up in our produce sections of our grocery stores here. I will have roasted chicken breasts, blackeyed peas, fried okra and this casserole. I will also have cornbread.

Vidalia Onion Casserole

3 lbs. Vidalia onions, thinly sliced
1/2 cup butter
1 cup uncooked rice
2 cups water
1 1/2 cups Swiss cheese, shredded
1 1/2 cups Half and Half

Preheat oven to 325 degrees. Saute the onions in butter in a large skillet until soft, about 10 minutes. Boil the rice in water for 5 minutes. Drain well. Place the onions, rice, cheese and Half and Half in a greased baking dish. Bake uncovered for 1 hour.
