Tracey's Favorite Salad (cucumber and tomato salad with onion, saut ed mushrooms, and Feta)

Here's a favorite of mine - I tend to just toss it together.

3 cucumbers, peeled (deseeding is optional)
2 large tomatoes
about 3 thin slices onion
about 1 cup cleaned and lightly sauteed mushrooms
about 1 Tbsp cracked black pepper
about 1 tsp fines herbes
1 Tbsp sage
Crumbled sheep's milk feta (serve on top of salad)
Croutons (optional)
1 to 1 mix of olive oil and vinegar (white or specialty) and herbs of
choice.

Mix all except the feta, the oil and vinegar mix and the croutons. Top with the cheese first, then the oil and vinegar and last the croutons.

A personal note - I have been known to use Melba toast, toasted savory bread and the like instead of croutons, and also to use Parmesan cheese instead of feta. I've also occasionally tossed in a chopped pickle or two as well.
