Recipe: Deli-style Peanut Sauce Noodle Salad

Deli-style Peanut Sauce Noodle Salad
Rec.food.cooking/Nona Myers (1996)

This is how I make a very simple Deli-style Peanut Sauce Noodle Salad

6 oz dried noodles (your choice)
1/4 cup peanut butter
2 T soy sauce
1/2 cup coconut milk
3 tsp fresh lime juice
2 tsp Thai red curry paste
1 tsp sugar
1/4 to 1/3 cup chopped cilantro (to your taste)
salt
cooked meat (optional)

Cook noodles accordingly; drain.

Combine the remaining ingredients in a saucepan and cook on medium low heat for 3-4 minutes. Pour over the drained noodles and stir.
