Recipe: Tropical Fruit Salad

TROPICAL FRUIT SALAD

2 cups fresh pineapple, cubed
1 fresh avocado, cubed
1 fresh mango, cubed
1 cup banana chips, cracked
1/2 cup chopped fresh cilantro
1/2 cup raspberry vinaigrette or poppy seed dressing
2 tbsp. toasted pecans
1/2 lime fresh lime juice
1 tbsp. toasted sesame seeds (for garnish)
2 tbsp. pink marinated ginger slices (for garnish)

Combine pineapple, avocado and mango; add banana chips, cilantro, raspberry vinaigrette or poppy seed dressing, and nuts. Mix gently, adding fresh lime juice.

Serve on platter adding ginger slices and toasted sesame seeds as garnish.

Yields: 4 servings
