Recipe: True Shoofly Pie

TRUE SHOOFLY PIE

FOR THE CRUMBS:
3/4 cup flour
1/2 cup brown sugar
2 tablespoons shortening
1/8 teaspoon ground nutmeg
1/8 teaspoon ground ginger
1/8 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
FOR THE MOLASSES MIXTURE:
1/2 cup molasses
1 egg yolk, well beaten
1/2 teaspoon baking soda dissolved in 3/4 cup boiling water
1 unbaked 9-inch pie shell

Combine all dry ingredients for crumbs, working in the shortening; set aside.

Combine the molasses, egg yolk and dissolved baking soda.

Make alternate layers of crumbs and molasses mixture in pie shell, beginning and ending with crumbs.

Bake in a hot (450 degrees F) oven until crust edges start to brown. Reduce to moderate (350 degrees F) and bake until firm, just about 20 minutes.

Makes 1 (9-inch) pie
