Recipe(tried): Tuesday Dinner:Southern Fried Chicken - Buttermilk Biscuits and Pecan Pie

Mashed potatoes w/creamed gravy,creamed peas w/pearl onions,tossed salad ,Sipseys buttermilk biscuits & Sipseys pecan pie.True comfort food!

These recipes Compliments of Evelyn Coach ,from the book,"Fried Green Tomatoes at the Whistle Stop Cafe" by Fannie Flagg.

Buttermilk Biscuits

2 cups flour
2 tsp. baking powder
2 tsp. salt
1/4 tsp. baking soda
1/2 cup Crisco
1 cup buttermilk

Sift dry ingredients together. Add Crisco & blend well until like fine meal. Add buttermilk & mix. Roll our thin & cut into desired size biscuit. Bake in greased pan at 450 degrees until golden brown.

Pecan Pie

9 inch pie shell, unbaked
2 cups pecans, chopped
1 cup sugar, brown or white(We love brown!)
1 cup light corn syrup
1 Tbls. flour
1 tsp. vanilla
1/4 tsp. salt
3 eggs
2 Tbls. butter

Line the pie shell with chopped pecans. Combine the sugar, corn syrup, flour, vanilla & salt & mix until blended. Beat in the eggs one at a time,mixing well each time. Pour into the nut-lined pie shell, & dot with butter. Bake at 350 degrres until firm-about 1 hour.
