TUNA BURGERS
2 tablespoons margarine, divided use
1/2 cup chopped onion
1/4 cup chopped celery
1 clove garlic, minced
4 slices whole-wheat bread
1/3 cup milk
1 (6 1/2 ounce) can tuna, drained and flaked
1 tablespoon dried parsley
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 large egg
3 tablespoons seasoned dried bread crumbs
Melt 1 tablespoon margarine in large skillet over medium heat. Add onion, celery and garlic; cook 3 minutes until crisp-tender.
Soak bread in milk in large bowl 5 minutes. Tear into small pieces. Add onion mixture, tuna, parsley, salt and pepper. Mix well; add egg; stir until blended.
Shape mixture into 4 patties; coat with bread crumbs.
Melt remaining margarine in skillet over medium heat; add patties and cook about 4 minutes on each side or until hot and browned.
Makes 4 servings
