Hi Connie, I looked in both of my Kansas City Jr. League Cookbooks - Beyond Parsley and Above and Beyond Parsley but didn't see any recipes for tortellini salad. Below are three recipes for you to check out - the source wasn't given for any of them. If they aren't what you're looking for, please let us know what ingredients you might remember and we'll keep looking. I have my fingers crossed that someone will have the exact recipe for you. CHICKEN SALAD TORTELLINI
1 (8 oz.) pkg. frozen cheese tortellini
4 tbsp. olive oil, divided use
1 lb. boneless, skinless chicken breast, cut in bite-size strips
2 cloves garlic, minced
5 oz. Swiss cheese, cut in strips
3 stalks celery, chopped
1 medium red or green bell pepper, chopped
1/3 cup chopped purple onion
1 1/2 cups Italian dressing
2 tbsp. Dijon mustard
Bibb lettuce (for serving)
Cook tortellini according to directions. Drain well. Combine with 2 tablespoons oil in large bowl. Toss gently; cool to room temperature.
Meanwhile, saute chicken strips and garlic in the remaining 2 tablespoons oil until chicken is fully cooked. Drain and set aside.
Add chicken, cheese, celery, bell pepper and onion to the tortellini.
Combine Italian dressing and mustard in jar. Cover and shake. Pour over salad, toss and chill in refrigerator before serving.
Serve on lettuce leaves, if desired.
CHICKEN TORTELLINI SALAD
4 boneless chicken breasts
1 tablespoon oil
1 (8 oz.) bottle of Italian dressing, divided use (your favorite brand)
1 to 2 lbs. cheese tortellini
1 onion, chopped
4 green onions, chopped
1 bell pepper, chopped
Saute chicken in oil and 1 tablespoon Italian seasoning until done. Cut in chunks.
Cook tortellini in boiling water until done. Drain. Run under cold water.
Place tortellini in large bowl. Mix onions and bell pepper with tortellini. Pour bottle of dressing over all, mix well and cover. Refrigerate overnight before serving.
