Turkey Macaroni Salad

1 cup uncooked macaroni
1/2 cup green pepper diced
1/2 cup chopped celery
1 tbsp chopped onion
2 cups turkey chunks*
1/2 cup canned green peas (optional)
3/4 cup mayonnaise
1/2 tsp salt
1/4 tsp pepper
1 tbsp chopped parsley or (1 tsp parsley flakes)
2 tomatoes cut into 8 wedges
6 lettuce leaves

Cook macaroni as directed on package. Drain and rinse in cold water. Mix all ingredients except lettuce leaves, tomato wedges and parsley. Cover and refrigerate. Before serving garnish with parsley and tomato wedges. Serve on salad plates lined with the lettuce leaves.

*Chicken, tuna and salmon can be substituted for the turkey in this recipe.
