Orange Glazed Baby Carrots with Parsley
Servings: 4-6
Preparation Time: 5 min
Cooking Time: 10 min
2 cups baby carrots, peeled
2 tablespoons butter
1 tablespoon orange peel freshly grated
2 tablespoons orange juice, fresh
1 teaspoon honey
2 tablespoons fresh parsley, chopped
salt and pepper to taste
1) In a medium saucepan, steam or boil carrots until tender. Drain and
rinse carrots; set aside.
2) In a large skillet, melt butter over medium heat. Add orange peel,
orange juice and honey to skillet and cook for 2-3 minutes.
3) Add carrots to skillet and season with salt and pepper.
4) Coat carrots with orange butter mixture in pan and heat through.
5) Remove from heat and toss carrots with fresh parsley.
