Hi! I just found these recipes a few days ago - - haven't tested them yet,
so I hope for the best! These are found in Julee Rosso's "Great Good Food: Luscious Lower-Fat Cooking"
lingo: C=cup, T=tablespoon t=teaspoon
Sage Sausage Patties Yield - 24 two inch patties 7% fat
3 pounds ground turkey (99% fat free)
1 med Onion, coarsely chopped
1/2 C finely chopped Italian Parsley
2 T finely chopped fresh Sage, or 2 t dried
6 cloves Garlic, finely minced
2 t ground Ginger
2 t crushed Red Pepper Flakes
1 t ground Cloves
1 t fresh ground Pepper
In large mixing bowl, thoroughly combine the turkey using fingers or two forks, add remaining ingredients. Mix well.
By hand, form mixture into 24 patties, 2 inches in diameter and 3/4-1 inch thick. Arrange in two very large skillets. Cook over medium heat, turning once, for 12-17 min, until cooked through in the centre.
Spicy Sausage Patties Serves 6 8% fat
1 Poblano Chili, roasted, stemmed and seeded
1/2 C tightly packed fresh Cilantro
1/2 C tightly packed fresh Italian Parsely
1/2 C tightly packed Romaine lettuce
1 Bay Leaf
2 t dried Oregano
1/2 t Salt
1/8 t freshly ground Pepper
1/8 t ground Cumin
1/8 t ground Cloves
1 pound lean Ground Turkey (99% fat free)
In food processor, place all of the ingredients except the turkey, and process until smooth. Scrape the mixture into a medium-size bowl. Add the turkey and combine well with your hands until spice mixture is evenly distributed. Cover and refrigerate at least 4 hrs for flavors to meld.
Heat a nonstick skillet over medium heat. Form sausage into 3 inch patties. Fry for 3-5 min, turning once, until lightly browned. Serve.
Scarborough Fair Sausage Yield: 24 patties 8% fat
2 pounds lean ground turkey (99% fat free)
4 Jalapeno Peppers, seeded and finely minced
2 Garlic Cloves, finely minced
4 slices White Bread, broken into 1/2 inch pieces
1/2 C chicken broth
1 C finely minced Parsley
2 T finely minced fresh Sage
1 T finely minced fresh Rosemary
1 T finely minced fresh Thyme
1 t ground Ginger
1 t crushed Red Pepper Flakes
1 T Horseradish
1 t ground Cloves
In large mixing bowl, blend all of the ingredients very well. Shape into 2 inch patties. In a large skillet, saute until well browned, turning frequently, about 8-10 min.
