EASY CHICKEN MOZZARELLA BAKE
2 cups hot water
1 cup Uncle Ben's Converted Brand Rice
1 (14.5 oz) can Del Monte cut diced tomatoes
1 envelope onion soup mix
1/4 teaspoon black pepper
1 broiler-fryer chicken, cut-up
2 cups mozzarella cheese, shredded
Preheat oven to 375 degrees F
In a baking dish combine water, rice, tomatoes, dry soup mix, and pepper. Mix well.
Place chicken into the rice mixture, cover tightly with foil.
Bake for 45 minutes.
Remove foil, sprinkle cheese on top and bake for 15 more minutes.
