Recipe: Vegetables Pasta Salad for Barb/Ontario

Salads - Potato, Pasta
Vegetable Pasta Salad
Yield: 6 Servings
From the EAT-L recipe list

10 oz pasta shells or any other suitable pasta
32 oz mixed vegetables; frozen (broccoli; cauliflower, etc )
1 medium white onion; sliced
2 tomatoes, chopped
1 cup Italian salad dressing; low calorie
1 15 oz can of Chickpeas; drained and rinsed
1 tsp garlic powder
1 tsp Cajun seasoning (optional)

Cook pasta shells according to directions. Drain and rinse in cold water. Pour boiling water over mixed vegetables. Drain and rinse in cold water. Combine chickpeas, dressing, spices and chopped onion and tomatoes together. Add the vegetables and mix. Add pasta mix well. Chill at least 1 hour before serving.
